Aged in neutral oak barrels for 10 months.

Riesling

Whole cluster pressing and gravity flow movement of the juice helps retain the varietal character of the delicate Riesling grape. The juice is fermented in stainless steel tanks with special yeasts cultivated from German origins that can withstand cool temperatures.

Traminette

Processed and fermented much like the Riesling, Traminette’s unique lychee character, along with other complex aromas and acidity, allow this wine to be developed as both a still wine and a sparkling wine.

Viognier

Coop Bandit

A 50/50 blend of Chardonnay and Viognier.  This blend incorporates the mineral character of Chardonnay and the tropical fruit flavors of Viognier.

 

CB Jr. / Petite Traminette

A refreshing dessert wine that pairs well with fruit desserts. It has 5% residual sugar, 10% alcohol with citrus aromas and flavor.
